Monthly Meal Plan Ideas and Strategies--Tips for Monthly Meal Plan- Meal Prep made easy

Have you ever meal planned for an entire month? I normally plan by the week, but have tried planning by the month several different times. For me, planning for an entire month has seemed so overwhelming. I mean, 30 meals…where to start? But recently I have had more of a method to my weekly meal planning. It has made planning what to eat each night SO EASY, and it made me realize figuring out how to plan an entire month actually is manageable.

So here is the method I have adapted:

Monday

I plan for sandwiches, quesadillas, or something else simple with minimal cooking.

Tuesday

We have a classic family meal. This is when I cook easy meals that I can cook without a recipe. Usually meals that take less than 30 minutes to cook.

Wednesday

On Wednesday, we try a new recipe or just something out of our normal meal rotation. I am nowhere near trying all the recipes I have pinned to my Pinterest Board, so inspiration is always available.

Thursday

LEFT OVER DAY. Having leftover day built in for each week has helped us stop wasting so much food.

Friday

Pizza! Sometimes we make our own, sometimes we get take out, and sometimes it is a Marketside pizza from Walmart.

Saturday

We like to feed the kids whatever we have on hand and get them down for bed a little early. Then my husband goes and picks up dinner for us to enjoy at home. This is our built in weekly date night.

Sunday

We make waffles every Sunday night. I love this tradition…mostly because I am not the one cooking! :) We normally have bacon and fruit on the side.

October Meals

Each week I will plan which of these meals we will have for the week. This offers a little flexibility since I do not always know exactly what we will have going on each week at the beginning of the month.

Monday Meals (5 options)

  1. Roast Beef Sandwiches (Made with leftover roast from a Sunday lunch)

  2. Quesadillas (We will either make these with leftover grilled chicken or Trader Joe’s grilled chicken)

  3. Baked Tacos

  4. Chicken Sandwiches (Same chicken options as the quesadillas)

  5. Grilled Cheese + Tomato Soup

Tuesday Meals (5 options)

  1. Spaghetti

  2. Fajitas

  3. Chicken and Veggies

  4. Chicken and Veggies

  5. Taco Bowls

Wednesday Meals (5 Options—Find Recipes here on board titled Recipes to Try)

  1. Taco Soup

  2. Southwest Chicken and Rice Foil Packs

  3. Hamburgers

  4. Baked Apple Pork Chops

  5. Sausage, Potato, and Green Beans Foil Pack

Sunday Lunch (4 Options—Again Recipes Here—Look for Instant Pot Board)

  1. Instant Pot Pot Roast

  2. Instant Pot Meatloaf

  3. Chili and Instant Pot Baked Potatoes

  4. Peanut Butter and Jelly Sandwiches

Grocery Shopping

I am most successful with our grocery budget when I use the grocery pick up service at Wal-Mart. This saves so much time and keeps me on budget (cuts down on impulse buys that we don’t even need), so WIN, WIN! I also plan to pick up the needed meat from Sam’s. Then I will just have to grab milk, fruits and veggies, and any other breakfast/lunch/snack staples we keep on hand.

Baked Tacos--Easy Weeknight Recipe

We are all about easy recipes at our house.  We are also all about Mexican inspired recipes. So when my sister shared this baked taco recipe with me, I knew it would be a win all around.  We LOVE these.  They are so easy to make.  They freeze well, so we always get at least TWO meals out of one recipe.

I shared this recipe on Instagram a few weeks ago.  Follow me there for more recipes and mom tips.

Ingredients

  • 12 Fajita sized tortillas
  • 1 lb. ground beef
  • 1/4 cup taco seasoning
  • splash of water
  • 1 can refried beans
  • 4 oz tomato sauce
  • Shredded Cheese (I almost always use the Fiesta Blend)

First, brown and drain one pound of ground meat.

Second, mix in 1/4 cup of taco seasoning.  I always add a splash of water to help with mixing.

Next, add in one can of refried beans and 4 ounces of tomato sauce.  The tomato sauce comes in an eight ounce can, so I just add about half of the can.

Once all of your ingredients are mixed together well, spread the meat and bean mixture on half of each tortilla.  Fold the tortilla together to make a taco.

Add sprinkled cheese to each taco.

Bake at 350 for 15-20 minutes or until the edges start to crisp up and brown.

These baked tacos are so delicious and freeze so well. When I prepare from frozen, I just put them in the oven directly from the freezer.  Then I add about 30 minutes to the baking time.

As I mentioned in my last post, I want to start being more intentional about spending time in the kitchen with my kiddos.  I’ve been thinking through different ways to involve Emma in everyday kitchen duties, but I’ve also been thinking of different things we can cook/bake that are geared more towards Emma having fun in the kitchen.  I’ve been looking on Pinterest, and I have come up with some ideas for our Fun with Food Fridays we have planned for the summer.

My Favorite Pinterest Recipes

I’ve been a professional pinner since 2010 (the year pinterest was created).  Over those years, I have been inspired to try all sorts of new things...especially recipes! Today I want to share with you my 5 favorite recipes I have found on Pinterest.  I make these over and over again. I love them. My family loves them. Most of them don’t require much time, so I think these are all easy weeknight meals.

Chicken and Avocado Burritos

First are these Chicken and Avocado Burritos from Closet Cooking.  I like to add beans into mine, and I always toast the outside a bit.  These are SO good, and I always make extra because they freeze so well.

Trader Joe's Mac n Cheese with Spinach and Sausage

Second is our favorite Trader Joe’s dish.  I save this for those nights that I need a quick and easy meal...and I love that it has spinach in it! The recipe calls for Italian Sausage links, but I like to use the Trader Joe’s Garlic Herb Chicken Sausage.

Instant Pot Meatloaf and Mashed Potatoes

Third is this Instant Pot Meatloaf and Mashed Potatoes from I Wash You Dry. I haven’t had an Instant Pot for very long, but this is one of my favorite recipes so far.  This one does take a little longer, so I like to cook on a preschool day. I can prep while Emma is at school, so that makes the prep work less stressful.

Chili Mac

This Chili Mac recipe from Num's The Word is so easy and definitely a crowd pleaser! I like to add a can of green chiles to ours, and, of course, a can of Rotel tomatoes would make it even better.

I don’t cook this Slow Cooker Brown Sugar Balsamic Glazed Pork Loin from Six Sister's Stuff often, but when I do, we absolutely enjoy it! We also enjoy the leftovers for a couple of days!

If you are looking for a new recipe to feed your family, I highly recommend each of these recipes.  They have been tested by my family many times!

PS-We have salad with all of our one pot meals to get our veggies in!
